We love peppers in our home. When peppers were so expensive at the grocery store, my husband found out and was like, um....we are growing our own! So when the peppers start coming in, this easy low carb meal is one of many favorite pepper meals.

We use riced cauliflower to make it low carb. The magical thing about cauliflower is that it absorbs the flavors it's cooked with. Plus, I really love getting veggies in wherever I can. Cheese tops this dish off perfectly, and we love our cheese!

This is one of those dishes that are amazing any time of year. So stock up on those peppers when they are on sale, diced them up, freeze them, then pull them out when you are ready to make this wonderfully tasty one pot dish!
Top it off with sour cream, cilantro, and fresh diced tomatoes...see, I snuck in some more veggies 😉 We like with chips (chippys!) on the side. You might be thinking, I thought it was low carb?!?! Well, yeah but who can resist chippys!? Try it with Nacho Doritos too...ufda. So good. Try it and let me know how you like yours topped!


Stuffed Pepper Skillet
Ingredients
- 1 lb lean ground meat hamburger, turkey and chicken are all good!
- 2 ½ cups riced cauliflower
- 2 cups any bell pepper, diced
- 1 small onion, diced
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1 pack taco seasoning
- 1 tablespoon Worcestershire
- 14.5oz can petite diced tomatoes- do not drain
- 2 cups shredded cheese see notes
- garnish cilantro, sour cream, lime wedge if desired
Instructions
- In a large non stick skillet, on medium heat, add the ground meat, breaking apart with a spoon, add onion and cook until meat is almost fully cooked.1 lb lean ground meat, 1 small onion, diced
- Add the rest of the ingredients except the cheese and optional garnish, simmer until veggies are tender and most of the liquid is absorbed. Taste and add more salt/pepper as desired2 ½ cups riced cauliflower, 2 cups any bell pepper, diced, ½ teaspoon salt, ½ teaspoon pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon cumin, 1 pack taco seasoning, 1 tablespoon Worcestershire, 14.5oz can petite diced tomatoes- do not drain
- Turn down to lowest heat setting, top with the cheese, cover until melted. Garnish with chopped cilantro, sour cream, and a lime wedge2 cups shredded cheese, garnish cilantro, sour cream, lime wedge
