Stuffed Pepper Skillet

Everything you love about a stuffed pepper in my low carb version! On the table in about 30 mins too!

Ingredients
  

  • 1 lb lean ground meat hamburger, turkey and chicken are all good!
  • 2 ½ cups riced cauliflower
  • 2 cups any bell pepper, diced
  • 1 small onion, diced
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 pack taco seasoning
  • 1 tablespoon Worcestershire
  • 14.5oz can petite diced tomatoes- do not drain
  • 2 cups shredded cheese see notes
  • garnish cilantro, sour cream, lime wedge if desired

Instructions
 

  • In a large non stick skillet, on medium heat, add the ground meat, breaking apart with a spoon, add onion and cook until meat is almost fully cooked.

  • Add the rest of the ingredients except the cheese and optional garnish, simmer until veggies are tender and most of the liquid is absorbed. Taste and add more salt/pepper as desired
    2 ½ cups riced cauliflower, 2 cups any bell pepper, diced, ½ teaspoon salt, ½ teaspoon pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon cumin, 1 pack taco seasoning, 1 tablespoon Worcestershire, 14.5oz can petite diced tomatoes- do not drain
  • Turn down to lowest heat setting, top with the cheese, cover until melted. Garnish with chopped cilantro, sour cream, and a lime wedge

NUGGETS OF KNOWLEDGE
Cheese - Any shredded cheese is good here, a package cheese is easy, but I like to use a  block and shred it myself, it is my go-to! I usually use cheddar or Monterey jack, my husband likes spice, so I'll often do a spicier cheese on half for him.
