My family loves this! It's a little Chipotle-like, so if you find yourself loving their rice, I strongly encourage you to give this one a try! We make this about once a month, if not more often. You can make it with fresh cooked rice or cold, next day rice. Both are great and bring this dish together pretty fast, making it the perfect weekend dinner helper! Top with beans and sautéed veggies for a fast vegan dinner. Make these carnitas and black beans and you have yourself some homemade Chipotle!
Feel free to adjust the amount of cilantro and lime to your liking. In my family, I am the cilantro lover and my husband only tastes soap chips - so we usually end up going lighter in the recipe, but then I serve it on the side to top off mine.
There's not really a lot to say about rice. It's good. Give it a try, let me know what you think about my version!
Cilantro Lime Rice

- 1 Rice cooker
Ingredients
- 2 cups cooked rice. I love jasmine for this dish! see notes
- 2 tablespoon butter use dairy free to make it vegan!
- ½ lime squeezed, should be about 2 tablespoon juice
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cup loosely packed cilantro, chopped
Instructions
- Prepare the rice in your rice cooker, mine takes about 25 mins.2 cups cooked rice. I love jasmine for this dish!
- In a large skillet over medium heat, melt the butter. Add all the ingredients. Toss and cook until hot and well combined.2 tablespoon butter, ½ lime squeezed, should be about 2 tablespoon juice, ¼ teaspoon salt, ¼ teaspoon pepper, ½ cup loosely packed cilantro, chopped, 2 cups cooked rice.
