In a large skillet over medium heat, add the Italian sausage, breaking it apart, add the onion, celery, and mushrooms. Continue to cook and break apart the meat. Cook until meat is no longer pink and is browning and sticking to the pan, make sure to scrape up those brown bits!
1 lb sweet Italian sausage, 1 small onion, diced, 3 ribs celery, sliced in half lengthwise, then diced, 4 oz mushrooms, diced
Add the seasonings and olive oil, stirring until fragrant.
1 cup loosely packed basil, then chopped, 2 tablespoon Italian seasoning, 3 garlic cloves, minced, salt to taste, for us, we use about 1-1.5 tsp, 1 tablespoon olive oil
Add the tomatoes, crushed tomatoes, and tomato sauce, stir until bubbly. Turn the heat down to low and simmer for about 30 mins or so. Taste and add more salt if needed
