Place the beef into a large bowl, add the red wine, and sprinkle the stew mix over the meat and stir well to coat. Marinate for at least 30 mins.

In a soup pot, heat neutral oil over medium high heat. Add the marinated beef, let sit until it gets a nice brown finish on the one side. Stir and continue to cook until browned well.

Add the carrots, celery, onion, bay leaves, and broth. Stir well. Turn heat to low, cover and let simmer for about an hour.

After about an hour, taste the stew and add additional seasoning mix up to 1 tablespoon as needed. Add the potatoes, stir to combine, cover and continue to cook for another hour, or until meat is very tender. Serve with hot, delicious crusty bread!
