


Beef Stew
Delicious homemade beef stew made with the perfect seasoning blend, chunky vegetables in a gloriously thick beefy broth. Get ready to dig into this hardy and warming dish!
Ingredients
- 2 lbs beef chuck, cut into ½ in - 1 inch chunks
- 3-4 tablespoon my homemade stew mix, see notes
- 2 tablespoon red wine, cooking wine is just fine
- 2 tablespoon neutral oil, canola or veggie
- 3 whole carrots, chopped into roughly ½ inch pieces
- 3 ribs celery, chopped into roughly ½ inch pieces
- 1 small onion, chopped into roughly ½ inch pieces
- 2 cups small baby potatoes, quartered
- 2 cups beef broth
- 2 bay leaves
Instructions
- Place the beef into a large bowl, add the red wine, and sprinkle the stew mix over the meat and stir well to coat. Marinate for at least 30 mins.2 lbs beef chuck, cut into ½ in - 1 inch chunks, 3-4 tablespoon my homemade stew mix,, 2 tablespoon red wine,
- In a soup pot, heat neutral oil over medium high heat. Add the marinated beef, let sit until it gets a nice brown finish on the one side. Stir and continue to cook until browned well.2 tablespoon neutral oil,
- Add the carrots, celery, onion, bay leaves, and broth. Stir well. Turn heat to low, cover and let simmer for about an hour.3 whole carrots, chopped into roughly ½ inch pieces, 3 ribs celery, chopped into roughly ½ inch pieces, 1 small onion, chopped into roughly ½ inch pieces, 2 cups beef broth, 2 bay leaves
- After about an hour, taste the stew and add additional seasoning mix up to 1 tablespoon as needed. Add the potatoes, stir to combine, cover and continue to cook for another hour, or until meat is very tender. Serve with hot, delicious crusty bread!2 cups small baby potatoes, quartered

Homemade stew seasoning - I use my homemade mix found here. I generally start with 3 TBSP, then increase up to 4 total upon tasting it during the cooking process.
